Grilled Chicken with BBQ Sauce

Ingredients

For the Grilled Chicken:

  • 50 gm oil
  • 1 whole chicken, cut into 8 pieces
  • 100 gm barbecue sauce
  • 10 gm garlic, crushed
  • Salt to taste
  • Black pepper to taste
  • 10 gm paprika
  • 20 gm mustard paste
  • 15 gm lemon juice

For the BBQ Sauce:

  • 25 gm oil
  • 10 gm chopped garlic
  • 20 gm chopped onion
  • 100 gm chili sauce
  • 50 gm tomato ketchup
  • 15 gm tamarind juice
  • 10 gm black pepper
  • 30 gm honey
  • 10 gm paprika
  • 5 gm Worcestershire sauce
  • 20 gm mustard paste

Directions

1. Prepare the Chicken Marinade:

  • In a bowl, combine the oil, crushed garlic, salt, black pepper, paprika, mustard paste, and lemon juice. Mix well to form a marinade.
  • Add the chicken pieces to the marinade, ensuring they are well coated.
  • Let the chicken marinate at room temperature for 30 minutes.

2. Preheat the Grill:

  • Preheat your outdoor grill to medium-high heat and lightly oil the grill grate.

3. Grill the Chicken:

  • Place the marinated chicken on the grill, skin-side down, and cook for 3 to 4 minutes.
  • Turn the chicken over, close the grill lid, and continue cooking.
  • Baste the chicken with remaining barbecue sauce every 6 minutes.
  • Cook until the chicken is no longer pink at the bone and the juices run clear, about 25 minutes. An instant-read thermometer should read 165°F (74°C) when inserted into the thickest part of the thigh.

BBQ Sauce Preparation

1. Cook the Sauce:

  • In a saucepan, heat the oil over medium heat.
  • Add chopped garlic and onion, and sauté until softened.
  • Stir in the chili sauce, tomato ketchup, tamarind juice, black pepper, honey, paprika, Worcestershire sauce, and mustard paste.
  • Simmer for about 10 minutes, stirring occasionally, until the sauce thickens slightly.

2. Serve:

  • Brush the BBQ sauce over the grilled chicken just before serving, or serve it on the side for dipping.
