    • 25g melted butter (or oil)
    • A few drops of vanilla essence
    • 2 large eggs

Instructions

  1. Prepare the Batter
    In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Make a well in the center.
  2. Add Wet Ingredients
    Pour the milk, melted butter (slightly cooled), vanilla essence, and eggs into the well. Using a wire whisk, mix the wet ingredients together, then gently fold them into the dry ingredients. Stir until smooth—small lumps are fine.
  3. Cook the Pancakes
    • Heat a non-stick pan or griddle over low-medium heat. Lightly grease with a small amount of butter.
    • Pour batter into the pan (about 1/4 cup per pancake). When bubbles start forming on the surface and the underside is golden brown, flip with a spatula.
    • Cook the other side until golden and cooked through.
