Arrabbiata pasta is a classic Italian dish known for its spicy tomato-based sauce. The word “arrabbiata” means “angry” in Italian, reflecting the dish’s signature heat, which is traditionally provided by chili peppers.It is very easy to cook and also special for spicy lovers.

Arrabbiata Pasta Recipe

Ingredients:

  • 500g spaghetti pasta
  • 50g olive oil
  • 30g onion, diced
  • 15g garlic, minced
  • 5g red pepper flakes (adjust to your spice preference)
  • 350g canned crushed tomatoes
  • Sugar (optional, to balance acidity)
  • Salt and pepper, to taste
  • Black olives, sliced (optional)
  • Freshly grated Parmesan cheese, for serving

Instructions:

Step 1: Cook the Pasta
  1. Bring a large pot of salted water (approximately 5 liters) to a boil.
  2. Add the spaghetti and cook according to package instructions until al dente (slightly firm to the bite).

Step 2: Drain and Prep
  1. Once the pasta is about 70-80% cooked, reserve about 1 cup of the pasta water before draining.
  2. Drain the pasta and toss it with a little olive oil to prevent sticking. Set aside.

Step 3: Prepare the Sauce
  1. In a medium-sized pot, heat 50g of olive oil over medium-high heat.
  2. Add the minced garlic and diced onion. Cook for about 1 minute, stirring often to avoid browning.

Step 4: Add Heat and Tomato Base
  1. Stir in the red pepper flakes, followed by the 350g of canned crushed tomatoes.
  2. If desired, add a small amount of sugar for a touch of sweetness.

Step 5: Simmer the Sauce
  1. Reduce the heat to low and let the sauce simmer gently for about 15 minutes, stirring occasionally.

Step 6: Season to Taste
  1. While simmering, season the sauce with salt and pepper to taste. Adjust according to your preference.

Step 7: Combine Pasta and Sauce
  1. Add the cooked spaghetti to the sauce, tossing gently until the pasta is well coated.

Step 8: Serve and Garnish
  1. Plate the Arrabbiata pasta and top with freshly grated Parmesan cheese.
  2. Optionally, add sliced black olives and finish with a pat of butter for added richness.
